I like edible art. Don't you? Restaurants, really good ones, are amazing edible art galleries. Oh, how I love you food.
Hair is art, too. You should be a trained professional to create hair art. If you are not a trained hair professional, you should NOT trim your own hair at 11:00 at night when you are tired and don't want to wait for a professional's assistance. Bad things happen if you do that. It's happened to you before and you keep doing it. Lessons.
You can, however, create food art with little to no experience. If bad things happen you just throw it out, you don't wear it on your head for all to see.
This beautiful dish is a cinch make. I love how quickly it comes together. The flavors are addicting and the hint of lime gives it an exciting twist. The gooey cheese between the potatoes and the veggies and chicken is comforting and satisfying. For added interest, try adding a can of black beans (drained and rinsed).
3 tbs olive oil, divided
1 lb boneless, skinless chicken breast cut into 1 inch pieces
salt and pepper
2 green bell peppers, seeds removed and sliced
2 anaheim peppers, seeds removed and sliced
1 medium red onion, sliced
2 cloves of garlic, minced
1/2 c salsa verde (I used mild)
juice of 1 lime
grated cheddar cheese
your favorite mashed potatoes
Heat a skillet to medium high. Add olive oil and chicken, season with s&p. Sauté chicken until a light golden brown all over, about 6 minutes. Remove chicken to a plate, cover with foil. Add last tbs of olive oil to pan along with peppers and onion. Sauté 5 minutes, turning mixture with tongs occasionally. Add garlic, cook 1 minute. Add salsa and cook 2 minutes or until warmed through. Add chicken back to pan and stir to incorporate. Remove from heat and stir in lime juice.
To serve, pile a good helping of mashed potatoes on a plate, top with cheese. Pile on a scoop of the green chile lime hash. Serve with lime wedges.
